Kippered Wongs - Pipis (Ugari)

Take 25 wongs from your favourite beach.

Clean wongs but retain shells, leaving the beard and a little of the white part.

Finely dice, 3 wongs, 1 small onion, and 1 rasher of bacon.

Add ½ tsp. salt.

Add ½ of pepper.

Mix together all ingredients thoroughly, place 1 good tsp. in each shell, press down and sprinkle grated cheese over.

Place on wire grill in smoker oven, close the lid and smoke according to instruction.
