Apple Wine Jerky |

Combine all brine ingredients into a nonmetal container, stir well and ad meat strips. Cover and refrigerate overnight. Remove the meat strips and blot with paper towels and place on oiled smoker racks to air-dry until they acquire a glaze. (This may take a few hours.) Place the racks of meat into the smoker oven. Smoke with apple wood until the meat is dry. |
