Apple Wine Jerky

- Ingredients -

  • 2 kgs lean meat, sliced into 6mm thick strips
  • 2 cups soy sauce
  • 1 cup water
  • 1 cup apple wine
  • 1 cup brown sugar
  • 2 tbsp. pickling salt
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ½ tsp. black pepper
  • ½ tsp. Tabasco sauce

Combine all brine ingredients into a nonmetal container, stir well and ad meat strips. Cover and refrigerate overnight. Remove the meat strips and blot with paper towels and place on oiled smoker racks to air-dry until they acquire a glaze. (This may take a few hours.) Place the racks of meat into the smoker oven. Smoke with apple wood until the meat is dry.
