Universal Brine Mixture

- Ingredients -

  • 3 Tablespoons salt (adjust to taste)
  • 1½ tablespoons brown sugar
  • 500 mls of water

When kippering fish fillets a few little tips can enhance the overall flavour. Firstly place fillets skin down, this allows the fillets to hold a lot of it's natural juices preventing dry flavourless fillets.
