Queenslanders' Grilled Whiting

The unique flavour of Bundsaberg Rum adds an interesting nuance to any grilled fish (Serves 4-6)

- Ingredients -

  • 1 kg whiting fillets
  • MARINADE:
    • ¼ cup olive oil
    • ¼ cup fresh lemon juice
    • 1 tsp. brown sugar
    • 2 tsp. Bundaberg Rum
    • Salt & Pepper to taste

Place fish separately on alfoil. Spoon stirred ingredients over fish then seal up foil. Place in smoker oven for twenty minutes.

Served with salad & dressing. Beer or Red Wine
