Fish Parcel

Place some chopped onion, shallots and tomato in a buttered alfoil tray.

Lay fillet over the top and sprinkkle with cheese, pepper and salt and wine if desired.

Fold alfoil over and make a sealed parcel.

Place on wire grills.

Close lid and cook until metho burns out.

Cook without sawdust - leave parcel closed

Cook with sawdust - open alfoil at the top
